I am pleased to report that I hit a home run tonight. I attempted, for the very first time, to make my favorite Thai dish -- chicken red curry on jasmine rice. I knew it was going well, but what put it over the top was when I added the chopped cilantro right at the end. Oh lord, it smelled *so* *good* when the cilantro hit the curry. The only real criticism I have for tonight's adventure is that I made waaaay too much. Probably three times as much as I needed. In the future I'll have to scale back the ingredients to a more manageable level.

And there definitely will be a next time.

And making too much is good... freeze in zip-loc freezer bags in 1 meal sizes... you have a quick dinner or lunch when you don't want to cook. :)
